I don't know about you , but Labor Day for us was a veggie-palooza!
Wow! Thanks to our dear passionate friend Jessica Goodman...
...of Freedom Landscaping, our garden was an explosion of produce.
We were so psyched!
But sadly, our first discovery in the garden was the destruction of the honey hive she had built, populated and installed. Sooo sad!
And of course this being Vermont, there was only one explanation.
Couldn't help, in addition to the grief, of being fascinated with the idea that this big hairy guy had a pooh party right in our garden.
At least the bear didn't attack the giant carrot Jessica put up for us! :)
But quickly we dove into discovering all the beautiful fruits of Jessica's labor ,
like these tomatoes,
and of course, beautiful...
gorgeous carrots in addition to the basil, pumpkins, squash, jalapeño peppers, parsley, oregano, rosemary, mint, cucumbers,
and check out these blackberries!!
So of course Katie and I got busy..
Our chopping and cooking fortified by delicious carrots,
and a delicious blackberry mint spritzer
to keep us happy as we
chopped and baked the eggplant,
sauteed zucchini, onions and garlic,
added fresh tomatoes, basil, oregano and parsley
YUM! Ratatouille straight from the garden!
We thought we could cook and freeze some for the winter but no such luck.
We ate it all before the weekend was out.
But oh so happy!!!
What a great ending to a wonderful summer!
